Preparing morels: tips
Important: You must never eat fresh morels raw, because they are inedible. Before preparing the morels, the first step is to carefully brush away any coarse dirt. The wild mushrooms are then boiled in water for five minutes. Let the morels stand in the water until the last grains of sand have settled on the bottom of the pot. Finally, all you have to do is take the morels out of the water with a ladle and rinse them under cold water.

Ingredients for mousse au chocolat pralines (for two times 63 pieces):
1 foil with hollow bodies dark chocolate (63 pieces),
1 foil with hollow bodies white (63 pieces),
100 g dark chocolate couverture,
50 g whole milk couverture,
4 egg whites, a pinch of salt,
125 g whipped cream,
1 packet of cream stabilizer
200-300 g white couverture,
200-300 g dark chocolate couverture,
2 tbsp baking cocoa,
5 tbsp sugar,
Praline fork,
Chocolate grille,
Chocolate capsules made of paper,
3 piping bags,
Disposable gloves
Preparation:
First prepare the chocolate mousse, because it has to be chilled for several hours. Chop the dark and whole milk couverture and melt over a hot water bath.
3. Beat the egg white with a pinch of salt until stiff and set aside.
4. In another bowl, beat the cream with the cream stabilizer until stiff.
5. First mix the melted couverture with the egg whites, then fold in the cream. Proceed carefully so that the mousse stays nice and airy.
6. Place in a bowl and let cool in the refrigerator for 2-3 hours.
7. After the cooling time, put the mousse in a piping bag and fill the hollow bodies with it. Leave enough space so that the pralines can still be closed.
8. Melt the white couverture and the dark couverture separately over the hot water bath.
9. Fill each into a piping bag and seal the pralines with the matching color.
10. Let the pralines set for 2-3 hours.
11. Reheat the remaining couvertures and coat the pralines.
12. Mix the baking cocoa with sugar for the dark balls.
13. Put on disposable gloves, take some melted chocolate in your hands and then toss the coated pralines in the cocoa-sugar mixture. Put the chocolates in the capsules.
14. For the white pralines, dip the pralines individually in the couverture, then place them on the praline grid and use the praline fork "hedgehogs". Let the pralines harden and then place them in the capsules. A nice effect is also created when the pralines are smoothly coated and then sprinkled with the remains of the dark couverture.
15. The pralines can be kept in the refrigerator for approx. 2 weeks.

Important: only collect what you are sure to know
